Dave’s Mixed Nut Protein Bars

Since we’re all cooped up inside, now is a great time to work on your cooking and baking skills (though, we don’t condone making non-essential trips to the grocery store, however)! We’ve reached out to our agents to learn some of their favourite recipes and we’re going to be sharing them with you. First up are Dave MacPhee’s mixed nut protein bars!

“These snack bars have become a staple in our household, and are a great healthier alternative to store bought granola bars. I make a double batch every Sunday to last the week and always carry a few with me. They are perfect when you are on the go, post workout, or as an after school snack for the kids. My boys can’t get enough of these ‘nola bars’.”

Melt together on low heat until smooth and well blended, and set aside to cool:
• 4 tbsp peanut butter
• 3 tbsp maple syrup
• 1 1/2 tbsp coconut oil

Mix in a small bowl and set aside:
• 1 tbsp ground chia seeds
• 3 tbsp water

Mix dry ingredients in a large mixing bowl:
• 1 1/4 cups quick oats
• 1/2 cup mixed nuts chopped (walnuts, almonds, pecans and hazelnuts are my favourites)
• 1/4 cup mini chocolate chips
• 1/4 cup dried cranberries chopped (dried blueberries also work great)
• 1/4 cup coconut sugar
• 1/4 cup hemp seeds
• 3 tbsp protein powder (whey or a vegan option)
• 1/2 tsp cinnamon
• 1/4 tsp salt

Add melted peanut butter mix and chia seed mix to the dry ingredients and mix together.

Spread flat and evenly in a parchment paper lined 8×8 baking pan.

Bake at 350F for 30-35 mins.

Let cool on wire rack and cut into 16 even bars.
